This is a bit different from Gordon Ramsay's recipe since I do sous vide and so there is less moiture evaporated.
Gordon Ramsay puts it in the oven for over three hours and so a lot of the moisture goes away. However, I did sous vide and I could not use the oven for very long so the wine could only reduce by about half so there was still a lot of moisture.
So I reduced the sauce separately on high heat.
I cooked the vegetables separately in the oven. It is fine to cook it with everything mixed together but I wanted to be able to taste each individual vegetable. Ultimately it was a success. There was no lamb msell. I don't know if it's thanks to Ramsay's herb recipe. Shank may have less lamb smell than other parts but it was so tasty nevertheless.
